How to use it

กระเจียวgrà-jiaw is the Siam tulip, a wild plant of the ginger family whose pink and white flowers come up in the dry forests of Isan when the rains begin. Its fields, ทุ่งดอกกระเจียวtûng dàwk grà-jiaw, bloom from June to August; the best known, in Pa Hin Ngam and Sai Thong national parks in Chaiyaphum, draw crowds to a festival every year. Villagers also eat the young flowers of some kinds, raw or blanched, with a chilli dip. Flower markets sell a cultivated kind, in pots and as cut flowers, as ปทุมมาbpà-tum-maa.
