How to use it

Chunks of pork belly slow-cooked with ginger, garlic, tamarind and a mild curry paste, without coconut milk, until dark, rich and a little sweet and sour. The recipe came to the North from Burma, and families cook big pots of it for festivals and merit-making.

It's one of the few Thai curries that isn't spicy, so it's a good first try.
