ก๋วยเตี๋ยว gǔay-dtǐaw

noodle soup; noodles noun

  • gǔay rising
  • dtǐaw rising
  • Rising: start low, dip, then rise to the top, like a doubtful “Really?”

Both syllables are rising. Every soi has a noodle stall: you pick the noodles and the meat.

How to use it

Ordering noodle soup takes three choices. First the noodles: thin rice noodles เส้นเล็กsêen-lék, wide flat ones เส้นใหญ่sêen-yài or yellow egg noodles บะหมี่bà-mìi. Then soup or dry: น้ำnáam or แห้งhâeng. Then the meat, such as pork, beef or ลูกชิ้นlûuk-chín, meatballs.

Taste before you add anything, then season the bowl yourself from the เครื่องปรุงkrûeang-bprung on the table: sugar, chilli flakes, fish sauce and chillies in vinegar.
